Chocolate Crunch Caramels

Those lovely people at Prima magazine asked me to come up with a super easy stress-busting treat that you don't need any special equipment to make and can be made in seconds with easy to find ingredients... step forward the chocolate crunch caramel. It’s easy feel overwhelm and to feel a little bit foggy with burning the candle at both ends so I carry these super easy to make energy boosters around. You don’t need any special equipment to make these treats, they don’t need refrigeration and won’t leak in your handbag.

Medjool dates are packed with healthy minerals and vitamins including A, B and K – plus they are gooey and have a lovely caramel type flavour. Walnuts provide a satisfying crunch and contain omega 3 fats, essential for brain health whilst a good quality dark chocolate is not only delicious but filled with crucial antioxidants.

Chocolate Crunch Caramels

INGREDIENTS

10 Medjool dates, pitted

30g walnut pieces

20g of good quality raw chocolate (or dark chocolate) of choice

METHOD

Simply chop the walnuts and the chocolate into small pieces.

Press into the cavity of each pitted date. Done!
