Any kind of raw summer rolls are as much about the dipping sauce as the summer rolls themselves.  This one does not disappoint. You can use it with gyozas, or, double up the ingredients to pour over shredded red cabbage, carrot ribbons and chopped broccoli for a mouth-watering feeling of eating a stir fry but with a lot more freshness. It is delicious poured over steamed rice too.

Check the heat of your chilli before you commit it to the jar. If it’s very hot, you may not need a whole chilli.

INGREDIENTS

Makes enough dipping sauce for 2 people

6 teaspoons tamari

2 teaspoons sesame oil

1 - 2 teaspoons agave (or honey)

3 teaspoons lime juice

1 teaspoon fresh ginger, grated

1 spring onion, chopped

1 small red chilli, minced

METHOD

Pour all the ingredients into a jam jar. Screw the lid on and shake all the ingredients together until well combined.

This will keep for around 5 days in the refrigerator.
