Chocolate Adventure Trail Mix

This isn’t the most demanding of ‘recipes’ – if you can call cocoa dusted trail mix, a ‘recipe’.

I’ve used activated and dehydrated almonds and hazelnuts because activation removes the enzyme inhibitors and makes for a more nutritious nut (and crunchier too). Although you can use dry nuts or seeds if you don’t have a dehydrator and don’t want to add the process of activation/dehydration.  

You could use any type nuts, seeds or dried fruit that you want. Not a fan of raisins? Add some dried cherries instead. Not keen on brazil nuts? Try cashews or pumpkinseeds.

I’ve suggested ground true cinnamon as a sweetener mixed in with the cacao powder.  

 This is a super useful snack to have in your bag. Just pop the trail mix in a jam jar with a screw top lid and you’re good to go.

INGREDIENTS

Place equal amounts of these in a bowl:

·         activated and dehydrated almonds

·         activated and dehydrated hazelnuts

·         brazil nuts

·         raisins

·         dried cranberries

·         vegan or raw chocolate buttons (or a 100g bar of vegan chocolate, chopped into squares)

plus enough cacao powder to coat the trail mix with a pinch of true cinnamon added.

 

METHOD

Mix all the nuts, dried fruit and chocolate buttons in a bowl. Lightly coat the trail mix with a mix of cacao powder and true cinnamon powder so the outsides of the nuts and raisins are lightly dusted. Pop the trail mix in a sieve over a bowl to remove/collect any excess cacao powder. Discard any excess powder, or store it for another batch.

Place the sieved trail mix in a jar. If kept in a cool dark place, this will keep for at least 3 months.
