Sweet Mustard Dressing

I am convinced that if you make this once, you will be finding reasons to use it on all manner of salads. Although it works particularly well with butter head lettuce. The champagne vinegar provides a subtle sharpness whilst overall the dressing has both mellowness and depth. Try substituting white wine vinegar if you cannot find champagne vinegar.

This will keep refrigerated for at least 2 weeks. I often have this is a jam jar in the refrigerator, so I am never without a decent dressing.

This dressing emulsifies better if you make it in a blender rather than with a hand whisk.

Sweet Mustard Dressing

INGREDIENTS

Makes approximately 1 and 1/4 cup

4 tablespoons champagne vinegar (or white wine vinegar)

2 tablespoons wholegrain mustard

2 tablespoons agave or raw honey

a pinch of salt

a twist of black pepper

12 tablespoons extra virgin olive oil

 

METHOD

In a blender, whizz together all of the ingredients until smooth and creamy.
